Creamy Charred Scallion Dip
This creamy roasted scallion sauce is a delicious, versatile staple that’s easy to make. It pairs well with grilled meats, roasted vegetables, crackers, or fresh crudités. The base is yogurt, which you can easily strain at home using a dish towel or cheesecloth to achieve a thicker consistency, or you can simply use Greek yogurt. Dill is used in this recipe, but feel free to swap in your favorite herb—basil is another favorite of mine.
Creamy Charred Scallion Dip
Skewers with Charred Scallion Dip
Ingredients:
1 bunch scallions
1 bunch dill
1 lemon
1 cup strained or Greek yogurt
2 cloves garlic
Olive oil
Salt
Pepper
Directions:
Lightly coat the scallions with olive oil, salt, and pepper.
Place in a hot frying pan.
Cook until lightly charred.
Roughly chop the charred scallions.
In a blender or food processor, combine scallions, dill, lemon juice, yogurt, and garlic.
Add salt, pepper, and more lemon juice to taste.
Serve with meat skewers, over roasted vegetables, or as a dip with crackers and crudités.
