Glazed Oyster Mushrooms with Scallions

During all the spring rain this past week, we made a recipe for Glazed Oyster Mushrooms with Scallions that was delicious. We served ours atop a bowl of rice with steamed bok choy along with some roasted vegetables. The core of this dish can be easily paired with a variety of fresh or cooked greens and can be made into a heartier meal when served with additional protein such as egg, trout, turkey stir fry strips, or your favorite beef cut.


Glazed Oyster Mushrooms with Scallions

Time: 25 min

Ingredients:
3 Tablespoons Neutral Cooking Oil (such as Vegetable, Grapeseed, or Avocado)

1 teaspoon Red Chili Flakes

1 teaspoon Salt

4-5 handfuls of shredded Oyster Mushrooms

(1 bag from GFF - 0.75 lbs - or more)

4 cloves Minced Garlic

1 Tablespoon Minced Ginger

2 Tablespoons Soy Sauce

2 Tablespoons Sesame Oil

2 Tablespoons Maple Syrup

4 Scallions

 

Directions:
1. Heat cooking oil in pan

2. Add Chili Flakes, Salt & shredded Oyster Mushrooms to the pan

3. Sauté for 5-10 minutes

4. Add Garlic, Ginger, Soy Sauce, Sesame Oil & Maple Syrup

5. Sauté for another 5 minutes

6. Top with chopped Scallions and Serve
